- 1/2 cup mushrooms, sliced
- 4 carrots, diced
- 1 large parsnip, diced
- 4 med. potatoes, diced
- 2 celery stalks, with leaves,diced
- 4 cups of beef stock
- 1 bay leaf

- Add barley with liquid, remaining beef stock, mushrooms, carrots, parsnip, potatoes, celery and bay leaf to onions
- Bring to a boil. Cover and simmer for 30 minutes
