Barley and Vegetable Soup

Serves:6
Preparation Time:30 minutes + 30 minutes cooking time
Preparation
  • 1/2 cup pearl barley
  • 4 cups of beef stock
  • In a medium saucepan, combine barley and beef stock
  • Bring to a boil and simmer uncovered for 5 minutes
  • 2 onions, finely chopped
  • 3 tbsp. olive oil
  • Heat oil in a large pot
  • Add onions and sauté until transparent
  • 1/2 cup mushrooms, sliced
  • 4 carrots, diced
  • 1 large parsnip, diced
  • 4 med. potatoes, diced
  • 2 celery stalks, with leaves,diced
  • 4 cups of beef stock
  • 1 bay leaf
  • Add barley with liquid, remaining beef stock, mushrooms, carrots, parsnip, potatoes, celery and bay leaf to onions
  • Bring to a boil. Cover and simmer for 30 minutes
  • 2 sprigs of dill, finely chopped
  • Remove bay leaf and add dill before serving
