Barley and Vegetable Soup

Preparation Time:
30 minutes + 30 minutes cooking time
Preparation
1/2 cup pearl barley
4 cups of beef stock
In a medium saucepan, combine barley and beef stock
Bring to a boil and simmer uncovered for 5 minutes
2 onions, finely chopped
3 tbsp. olive oil
Heat oil in a large pot
Add onions and sauté until transparent
1/2 cup mushrooms, sliced
4 carrots, diced
1 large parsnip, diced
4 med. potatoes, diced
2 celery stalks, with leaves,diced
4 cups of beef stock
1 bay leaf
Add barley with liquid, remaining beef stock, mushrooms, carrots, parsnip, potatoes, celery and bay leaf to onions
Bring to a boil. Cover and simmer for 30 minutes
2 sprigs of dill, finely chopped
Remove bay leaf and add dill before serving
