- 5 ripe bananas
- 4 eggs
- 4 pkgs (10g each) vanilla sugar
- 2 pkgs (16g each)baking powder
- 240g caster sugar
- 60g protein powder
- 380g wholewheat flour
- 1/3 cup olive oil
- 20g basil, finely chopped

- Heat oven to 180°C and grease muffin tin
- In large bowl, combine bananas, eggs, vanilla sugar and baking powder
- Add sugar, protein powder, flour and olive oil
- Mix in basil. Divide evenly into muffin tin
- Bake for 35 minutes or until toothpick inserted in centre comes out clean. Cool 10 minutes before removing from pan
