Banana Muffins

A healthy snack

Makes:12 muffins
Preheat Oven:180°C
Muffin pan, silicon preferred:12
Preparation
  • 5 ripe bananas
  • 4 eggs
  • 4 pkgs (10g each) vanilla sugar
  • 2 pkgs (16g each)baking powder
  • 240g caster sugar
  • 60g protein powder
  • 380g wholewheat flour
  • 1/3 cup olive oil
  • 20g basil, finely chopped
  • Heat oven to 180°C and grease muffin tin
  • In large bowl, combine bananas, eggs, vanilla sugar and baking powder
  • Add sugar, protein powder, flour and olive oil
  • Mix in basil. Divide evenly into muffin tin
  • Bake for 35 minutes or until toothpick inserted in centre comes out clean. Cool 10 minutes before removing from pan
