Fresh Summer Salad

A personal favourite

Serves:8
Preparation
  • 1 red pepper, remove seeds and diced
  • 1 fresh red chili,remove seeds and finely chopped
  • 1 red onion, finely chopped
  • 1 barquette of red cherry tomatoes, cut in half
  • 1 barquette of yellow cherry tomatoes, cut in half
  • 1/2 a cucumber, diced
  • 1 romaine lettuce, chopped into 1cm strips
  • 1 pkg of mixed green salad
  • 1 radicchio, chopped into 1cm strips
  • 1 small handful of each herb chopped: parsley, basil, chives and mint
  • 200g of feta cheese, diced into 1cm cubes
  • Wash all ingredients
  • Chop all ingredients into a large salad bowl
  • 12 tbsp (3/4 cup) extra virgin olive oil
  • 4 1/2 tbsp. white balsamic vinegar
  • 1 tbsp. dijon mustard
  • sea salt and freshly ground black pepper
  • In a bowl, mix together, olive oil, vinegar, mustard, salt and pepper. Taste to balance the flavours
  • Just before serving, add dressing to salad and mix together
