Preparation
- 3 eggs, separated
- 3/4 cup sugar

- In a large bowl, beat egg yolks and sugar until thick and lemon coloured
|
- 1 1/8 cup of flour
- 3/4 tsp. baking powder
- 3/8 cup pineapple juice
|
- Add flour, baking powder, and pineapple juice to egg yolk mixture
- In a small bowl, beat egg whites until stiff; fold into batter
|
- 1/4 cup of butter
- 3/8 cup of brown sugar
|
- Melt and carmelise sugar and butter in flan pan
|
- 10 pineapple slices
- 10 maraschino cherries
|
- Arrange pineapple slices and maraschino cherries over caramelised sugar
- Pour batter evenly over pineapple slices and cherries
- Bake for 30 minutes. Cool in pan 5 minutes; invert onto serving plate
