Pineapple Upside-Down Cake

Preheat Oven:180°C
Size of round flan pan:31cm
Preparation
  • 3 eggs, separated
  • 3/4 cup sugar
  • In a large bowl, beat egg yolks and sugar until thick and lemon coloured
  • 1 1/8 cup of flour
  • 3/4 tsp. baking powder
  • 3/8 cup pineapple juice
  • Add flour, baking powder, and pineapple juice to egg yolk mixture
  • In a small bowl, beat egg whites until stiff; fold into batter
  • 1/4 cup of butter
  • 3/8 cup of brown sugar
  • Melt and carmelise sugar and butter in flan pan
  • 10 pineapple slices
  • 10 maraschino cherries
  • Arrange pineapple slices and maraschino cherries over caramelised sugar
  • Pour batter evenly over pineapple slices and cherries
  • Bake for 30 minutes. Cool in pan 5 minutes; invert onto serving plate
