Thai Chicken Wings
A great success at parties

Preparation
- 3 pkgs of chicken wings (15 whole wings)

- Separate wings in half at the joint
- Place in a container

- 8 cloves of garlic, crushed
- 8 stems of coriander (cilantro), leaves only, finely chopped
- 4 tsp of tumeric (curcuma)
- 2 tsp black pepper
- 1 tsp salt
- 2 tsp icing sugar
- 1 tbsp hot chili sauce
- 2 tbsp sweet chili sauce
- 3 tbsp. of oil for frying

- In a mortar or blender, mix well garlic, coriander, tumeric, pepper, salt, sugar, and both chili sauces
- Pour marinade paste over chicken and mix well with your hands to ensure all wings are covered
- Seal container and place overnight in refrigerator
- Approximately 30 minutes before serving time, heat a little oil in a frying pan over medium heat
- Add enough wings to bottom of pan
- Cook on both sides and then repeat for remainder of wings
