Thai Chicken Wings

A great success at parties

Serves:8
Preparation Time:30 minutes + marinade overnight
Preparation
  • 3 pkgs of chicken wings (15 whole wings)
  • Separate wings in half at the joint
  • Place in a container
  • 8 cloves of garlic, crushed
  • 8 stems of coriander (cilantro), leaves only, finely chopped
  • 4 tsp of tumeric (curcuma)
  • 2 tsp black pepper
  • 1 tsp salt
  • 2 tsp icing sugar
  • 1 tbsp hot chili sauce
  • 2 tbsp sweet chili sauce
  • 3 tbsp. of oil for frying
  • In a mortar or blender, mix well garlic, coriander, tumeric, pepper, salt, sugar, and both chili sauces
  • Pour marinade paste over chicken and mix well with your hands to ensure all wings are covered
  • Seal container and place overnight in refrigerator
  • Approximately 30 minutes before serving time, heat a little oil in a frying pan over medium heat
  • Add enough wings to bottom of pan
  • Cook on both sides and then repeat for remainder of wings
